Integral Chef
This chef knife is hand forged from a piece of 1.25” round 52100. The spine is thinned out to around 3/32” with about a 2.25” wide heel, and the blade length is about 8”. The handle is faceted from a piece of stabilized ironwood burl, and features a hand peened stainless pin. The bolster and spine are mirroe polished, and I ground the choil area with a small contact wheel so your finger can comfortably rest when choking up on the blade. Also included is a custom fit blade sleeve tooled from 8/9oz Hermann Oak leather.
